Crispy Pasta Fried Rice Recipe
An amusing twist on fried rice, this pleasant lunchbox recipe is made with orzo rather than rice. You can prep a massive batch of it early within the week and let your kids make their lunches!

• 1 cup orzo pasta
• 1/2 cup frozen edamame
• 1/2 cup frozen corn
• 1/2 cup frozen peas and carrots
• One egg, scrambled (optional)
• Four green onions, finely sliced
• 2/3 cup sesame dressing
1. Take a full pot of water to a boil. Add orzo pasta, making for 12 minutes.
2. Add edamame, peas, corn, and carrots. Cooking 2-3 minutes more until the pasta is delicate. Shift to a colander and drain.
3. Place pasta in a full serving bowl. Add scrambled egg, green onions, and sesame dressing. Mix until well blended.
4. Freeze until ready to serve.
Quick note: Did you know the egg is still a big part of a vegetarian diet? While it’s natural to move out the scrambled egg in this recipe if you want, you won’t be blowing out on any veggies if your kid also loves eggs!
